POTATO PANCAKES

3 1/2 c. ground potatoes
1 Tbsp. onion
1 1/2 tsp. salt
2 or 3 eggs
1/3 c. canned milk
1/2 c. or little more flour

Note: White potatoes are best to use.
After potatoes and onion are ground and before adding
other ingredients, press hand or small plate on ground potatoes
to pour off excess water. Then add other ingredients. Serve
with fried pork sausage and warm applesauce (with sugar and
cinnamon added). We like the applesauce on the pancakes so the
applesauce should be warm, so as not to cool the pancakes.
This takes 2 to 3 cans applesauce. Makes 18 pancakes (3 1/2
inches).
