POTATO PANCAKES 6 raw medium size potatoes 1 small onion 2 eggs 1/3 c. soy milk 2 Tbsp. soy flour 1 tsp. salt 1/4 tsp. paprika 1 c. wheat germ Peel and grate potatoes and onion fine. Beat in eggs and milk. Mix wheat germ, flour and seasonings. Drop batter from spoon into hot shallow fat in a heavy skillet. Fry over low heat until each side is golden brown. Serve with apple- sauce, sour cream or syrup. Makes 10 to 12 pancakes.
