2 c. cooked squash
1 Tbsp. sugar
1/2 c. mayonnaise
1 egg, beaten
1/4 c. chopped bell pepper
salt and pepper to taste
1 1/2 c. grated cheese
1 stick oleo
1 tube Ritz crackers
Cook squash and onions and drain. While warm, add
cheese. Mix all other ingredients and pour into buttered
casserole. Melt butter and crush crackers and pour on top.
Bake at 350 degrees for 30 minutes.
