FIESTA VEGETABLE POT 2 slices bacon 1/2 c. sliced celery 1/3 c. chopped onion 1 can (16 oz.) pork and beans, in tomato sauce 1 can (16 oz.) whole, peeled tomatoes 1 can (12 oz.) whole kernel vacuum packed golden sweet corn 2 tsp. chili powder 1 tsp. salt Cook bacon until crisp; remove from pan. Cook celery and onion in bacon drippings until tender. Add pork and beans, lima beans, tomatoes, corn, chilli powder and salt. Mix well. Bring to a boil, reduce heat and simmer 15 minutes. Garnish with crumbled bacon. Makes 12 to 14 servings.
