SWEET POTATO ISLANDS 1 can (15 1/4 oz.) sliced pineapple 2 cans (16 oz. each) sweet potatoes, drained 1/2 c. orange juice 1/4 c. margarine 1/4 c. firmly packed brown sugar 1/4 tsp. salt 1/4 tsp. nutmeg 1/4 tsp. cinnamon 1/4 c. miniature marshmallows Arrange pineapple on baking sheet. Heat potatoes with orange juice, margarine, sugar, salt, nutmeg and cinnamon. Mash potatoes or beat with electric beater. Fold in marshmal- lows; mix until melted. Pipe hot potatoes through pastry tube on top of each pineapple slice (approximately 1/2 cup per slice). Bake at 400 degrees for 10 minutes. Makes 8 servings.
