1/4 lb. bacon
1 large onion
1 green pepper
1 (16 oz.) can black-eyed
peas, drained
1/2 c. water
1 c. water
1/2 c. raw brown rice
6 drops hot sauce

Cook bacon until brown. Add chopped onion and pepper.
Add peas and water and simmer 10 minutes. Add water, brown
rice and hot sauce and simmer 20 minutes. Add salt and pepper
to taste. Add more water if needed. Bake in a casserole at
325 degrees for 1/2 hour or more.
