MEDITERRANEAN VEGETABLE CASSEROLE

1 (16 oz.) can stewed tomatoes
1 medium eggplant, peeled and
cubed
1 large onion, chopped
2 to 3 zucchini, cubed
1 tsp. fresh garlic, minced or
1 Tbsp. garlic powder
salt and pepper to taste
1 c. herb croutons
1/2 c. cheese crackers,
crushed

Combine all ingredients except cheese crackers. Micro-
wave for about 10 minutes, stirring and turning dish at 2
minute intervals. Then top with cheese crackers or crushed
croutons. Bake at 350 degrees until brown or cook in a 325 degrees oven for
40 minutes without microwaving.
