BAKED ZUCCHINI 6 zucchini, sliced penny style about 1/2-inch thick 2/3 c. sour cream 1 c. grated cheese 1/2 medium onion, sliced 1 Tbsp. butter, or margarine 1/2 tsp. salt 3 Tbsp. fresh bread crumbs 2 Tbsp. grated cheese (cheese can be Jack or Cheddar or mixture of each) Precook zucchini slices until just crisp tender. Drain and place into an 8-inch casserole. Combine sour cream, 1 cup grated cheese, butter, salt and onion and heat until blended. Pour sauce over squash. Combine 2 tablespoons grated cheese and bread crumbs and sprinkle over casserole. Bake at 375 degrees for 10 to 15 minutes. Let stand for 5 minutes before serving. Yields 6 servings.
