FRENCH-STYLE GREEN BEANS These string beans make a flavorful and striking side dish. 1 lb. string beans 2 Tbsp. butter or margarine 1/4 c. chicken broth 1/4 c. chopped red bell pepper 1 Tbsp. chopped fresh parsley 1/2 tsp. salt (optional) 1/8 tsp. coarsely ground black pepper Rinse beans well; trim stem ends and cut beans length- wise (French-style). Melt butter in medium-size skillet over medium heat; stir in chicken broth. Add beans; bring liquid to boil. Reduce heat; cook, covered, about 8 minutes. Add bell pepper, parsley, salt (if desired) and pepper; cook, uncovered, an additional 5 minutes. Makes 4 servings.
