SWISS BROWN RICE CASSEROLE 2 Tbsp. oil 2 c. onion, sliced 3 stalks celery, sliced 1 c. mushrooms, sliced 1/2 c. parsley, chopped 1 clove garlic, minced 1 1/2 tsp. paprika 1/2 tsp. salt 1/2 tsp. pepper 1/4 tsp. ginger 3 c. cooked brown rice 1 lb. grated Swiss cheese Saute vegetables in oil. Add seasoning. Layer rice, vegetables and cheese in a casserole dish. Repeat layers. If dry, sprinkle with 1/4 cup water before last layer of cheese. Bake 20 to 25 minutes at 350 degrees. Option: With a cup of sesame seed sprinkled on the rice layer, this dish will provide required protein for the meal.
