MARINATED CARROTS 2 lb. sliced, cooked carrots 1 medium onion, diced 1 medium green pepper, diced 1 c. celery, diced 1/2 c. vegetable oil 1/2 c. vinegar 1 c. sugar 1 tsp. salt 1 tsp. pepper 1 Tbsp. mustard 1 can tomato soup Mix carrots, onion, green pepper and celery together in glass bowl and set aside. Put oil, vinegar and sugar in small saucepan and bring to a boil, then cool. Then add salt, pepper, mustard and tomato soup to mixture. Mix it up and pour over carrot mixture. Refrigerate overnight.
