ZUCCHINI QUICHE 4 c. sliced zucchini 1 c. onion 1/2 c. butter 2 Tbsp. dried parsley 1/2 tsp. salt and pepper 1/4 tsp. garlic powder 1/4 tsp. basil 1/4 tsp. oregano 2 beaten eggs 8 oz. shredded Mozzarella 1 pkg. crescent rolls 2 Tbsp. mustard Cook 10 minutes zucchini, onion and butter. Stir in parsley, salt, pepper, garlic, basil and oregano. Mix together eggs and cheese; add to zucchini. Press crescent rolls into a 10 x 10-inch pan (I use a quiche dish). Spread mustard over rolls; pour zucchini mixture on top. Bake at 375 degrees for 18 to 20 minutes. Let stand 10 minutes.
