BAKED EGGPLANT

1 medium-size eggplant
1/2 lb. ground chuck
5 Tbsp. margarine
1/2 c. minced onion
1/2 c. chopped green pepper
2 c. cooked rice
1 tsp. salt
1/2 tsp. pepper
1/2 c. diced bread (use more
if you wish)

Peel eggplant; cut into cubes and cook in boiling water
until tender, 15 to 20 minutes. Drain and mash with fork.
Brown ground beef in 3 tablespoons margarine. Add onion and
peppers. Cook vegetables until tender. Stir in mashed egg-
plant, rice, salt and pepper. Spoon into 10 x 6 x 2-inch
baking dish. Saute diced bread in 2 tablespoons margarine.
Sprinkle over eggplant mixture and bake in 375 degrees oven for 20
minutes until bread is brown. Serves 4.
