BRAZILIAN RICE

1 clove garlic, minced
1/2 medium-sized onion,
chopped
1/2 fresh tomato, chopped
1 c. rice
2 c. water
1 tsp. salt
2 Tbsp. oil

Brown garlic and onion in hot oil until tender. Add
rice and stir until rice is coated with oil. Add water, salt
and tomato. Cook until water is absorbed (about 20 minutes).
