POTATO FRIED CAKES 1 1/2 c. mashed potatoes 2 eggs 1 Tbsp. melted butter 1 1/2 c. sugar 1 c. sweet milk 4 tsp. baking powder 4 c. flour 1/2 tsp. nutmeg 2 tsp. vanilla Mix potato, eggs, butter, sugar, milk and vanilla. Add dry ingredients. You may have to add extra flour to handle. Roll to about 1/3 to 1/2-inch thick. Cut with doughnut cutter. Fry in deep fat, being careful not to have grease too hot.
