1/2 c. brown sugar
1/3 c. butter or margarine,
1 c. peeled, shredded green
1 egg, beaten
1 c. flour, mixed with 1/2
tsp. baking powder, 1/4
tsp. baking soda and 1 tsp.
1/4 c. crushed walnuts
Mix sugar, margarine, tomatoes and egg together. Slowly
add to flour mixture, mixing well. Stir in nuts. Pour batter
into greased muffin tins until they're half full. Bake at 350 degrees
