TOMATO GEMS 1/2 c. brown sugar 1/3 c. butter or margarine, melted 1 c. peeled, shredded green tomatoes 1 egg, beaten 1 c. flour, mixed with 1/2 tsp. baking powder, 1/4 tsp. baking soda and 1 tsp. cinnamon 1/4 c. crushed walnuts Mix sugar, margarine, tomatoes and egg together. Slowly add to flour mixture, mixing well. Stir in nuts. Pour batter into greased muffin tins until they're half full. Bake at 350 degrees for 25 minutes or until they test done. Makes 12 muffins.
