2 c. flour
1 1/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 c. cooking oil
3 eggs, beaten
1 1/2 c. grated carrots
1 1/2 c. grated apples
3/4 c. coconut
1/2 c. chopped nuts
1/2 c. chopped dates
1/2 tsp. vanilla

In mixing bowl, combine flour, sugar and soda. In large
bowl combine carrots, apples, coconut, nuts and dates. Stir in
beaten eggs, oil and vanilla. Add dry ingredients, stirring
only until moistened. Grease or line with paper cups, muffin
tins. Spoon batter into cups until 3/4 full. Bake at 375 degrees for
18 to 20 minutes. Remove from pan and cool.
