ZUCCHINI BREAD 1 c. salad oil 3 eggs, slightly beaten 2 c. sugar 2 c. grated raw zucchini 2 tsp. vanilla 3 c. all-purpose flour 1 tsp. baking soda 1/4 tsp. baking powder 3 tsp. ground cinnamon 1 c. nuts Combine oil, eggs, sugar, zucchini, vanilla and blend well, set aside. In a small bowl mix flour, soda, baking powder, salt and cinnamon. Stir in other ingredients. Spoon into 2 well-greased loaf pans. Bake at 325 degrees for 1 1/2 hours or until done.
