APPLE RICE PANCAKES
1 c. Dutch apple yogurt
1/2 c. milk
2 Tbsp. oil
1 c. flour
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. cooked Minute rice
Heat electric griddle to 375 degrees. In bowl mix egg, yogurt,
milk and oil. Add remaining ingredients and mix until large
lumps disappear. Lightly grease griddle. Pour batter about
1/4 cup at a time onto griddle. Bake until bubbles form and
edges start to dry; turn and bake other side. Approximately
110 calories per pancake. Makes approximately 12 (4-inch)
