PECAN PIE

1/4 c. butter
2/3 c. brown sugar, firmly
packed
1/4 tsp. salt
3/4 c. dark corn syrup (I use
medium or green label)
3 eggs, beaten
1 tsp. vanilla
1/2 recipe of 2 crust pie
shell
1 c. pecan, chopped

Cream butter and sugar together until fluffy; add salt,
corn syrup, eggs and vanilla. Line pie pan with pastry and
sprinkle with pecans; pour the filling over pecans. I then
decorate top with pecan halves. Bake in very hot oven (450 degrees)
for 10 minutes; reduce temperature to moderate (350 degrees) and bake
35 minutes longer or until knife inserted in center comes out
clean. Makes 1 (9-inch) pie.
