APPLE PIE

6 to 8 tart apples
1/2 c. sugar
1/2 c. brown sugar
2 Tbsp. plain flour
3/4 tsp. nutmeg
3/4 tsp. cinnamon
2 Tbsp. lemon juice
1 double pastry crust, unbaked
4 Tbsp. butter
milk
sugar

Preheat oven to 400 degrees. Pare and core apples. Cut into
eighths. Place in bowl and toss with sugar, flour, spices and
lemon juice. Let stand 15 to 20 minutes. Place in pie shell
and dot with butter. Cover with pastry. Brush top with milk
and sprinkle with sugar. Bake for 35 to 40 minutes.
