ZUCCHINI NUT BREAD 3 eggs 1 c. oil 1 Tbsp. vanilla 2 c. shredded zucchini 1 c. sugar 2 c. flour 1 1/2 tsp. soda 1 Tbsp. cinnamon 1/4 tsp. baking powder 1 c. chopped nuts In medium mixing bowl combine eggs, oil, vanilla and zucchini; mix well. Add remaining ingredients and stir until moistened. Pour into greased 9 x 5 x 3-inch loaf pan or will fill 4 miniature loaf pans. Bake 30 to 40 minutes at 400 degrees. Test with toothpick.
