MY FAVORITE CORNBREAD

1 c. corn meal
1 c. flour
1 tsp. salt
1 tsp. baking powder
3/4 tsp. soda
2 eggs
2 Tbsp. brown sugar
1 c. buttermilk
4 Tbsp. vegetable oil

Sift together the meal, flour, salt, baking powder and
soda. Set aside. In a small bowl, beat the eggs. Then beat
in well the brown sugar. Add the buttermilk and oil. Mix well
and add to the flour and meal mixture. Bake in a 7 x
10 1/2-inch pan at 425 degrees for 20 to 25 minutes.
