1 1/2 c. sugar
3 Tbsp. cornstarch
3 Tbsp. all-purpose flour
dash of salt
1 1/2 c. hot water
3 slightly beaten egg yolks
2 Tbsp. butter or margarine
1/2 tsp. grated lemon peel
1/3 c. lemon juice
Mix sugar, cornstarch, flour and salt. Gradually add
hot water, stirring constantly. Cook and stir over medium heat
until bubbly. Reduce heat; cook and stir 2 minutes longer.
Remove from heat. Stir moderate amount of hot mixture into egg
yolks, then return to hot mixture. Bring to boil and cook 2
minutes, stirring constantly. Add butter and lemon peel.
Slowly add juice. Mix well. Top with meringue and bake 10
minutes or top with Cool Whip when cool.
