RITZ CRACKER PIE

3 egg whites, beaten until
stiff
1 c. sugar
1 tsp. baking powder
20 crushed Ritz crackers
3/4 c. chopped pecans
1 tsp. vanilla flavor

Add sugar and baking powder to beaten egg whites,
gradually. Fold in crackers, pecans and vanilla flavor. Put
in greased pie pan and bake 20 minutes at 350 degrees. When cool,
cover with 1/2 pint whipped cream and sprinkle with coconut.
