MELT-IN-YOUR MOUTH WAFFLES 2 c. flour, up to 1/2 whole wheat 3 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 c. sour milk or buttermilk 3 eggs, well beaten 2/3 c. oil Sift flour, baking powder, baking soda and salt. Combine sour milk and eggs. Add to dry ingredients. Beat with hand or electric beater until smooth. Stir in oil. Bake in waffle iron. These waffles are high enough in protein to serve for supper. We eat them with fruit in season, peanut butter, applesauce and yogurt as well as traditional toppings.
