2 c. white sugar
1 c. light vegetable oil
3 1/2 c. unsifted flour
1 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. grated zucchini
1 c. chopped walnuts
1 c. raisins
1 1/2 tsp. vanilla
Beat eggs; gradually add sugar. Add oil. Mix flour,
salt, baking soda, cinnamon and baking powder. Add to other
mixture. Add zucchini, then add rest of ingredients. Grease
and flour pans. Use loaf pans; fill about 2/3 full. Bake at
350 degrees for 55 minutes. Cool before removing from pans.
