IRISH SODA BREAD

4 c. flour
4 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
2 c. raisins
2 c. buttermilk
2 Tbsp. shortening
1 egg, beaten
4 Tbsp. sugar (optional)

In a large bowl mix flour, baking powder, baking soda,
salt and shortening. Crumble well between hands to mix short-
ening with flour. Add raisins; add buttermilk to beaten egg.
Add to flour and mix well. Turn out onto floured board and
knead for 1 minute. Form into a round loaf and bake in a
9-inch pan 1 hour at 350 degrees.
