1 c. walnuts
1 medium zucchini
1/2 c. vegetable oil
1 c. sugar
2 eggs
2 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. baking powder
1 1/2 c. flour

Use food processor. Preheat oven to 350 degrees. Position
disc slicing side up, slice walnuts. Set aside. Position
shredding side up, shred zucchini about 1 1/2 cups. Set aside.
Position knife blades in bowl, add oil, sugar, eggs, vanilla,
baking soda, cinnamon, salt and baking powder. Processor mix
about 15 seconds; add flour pulse 2 or 3 times. To mix, stop
and scrape bowl on sides, pulse 1 or 2 times more. Remove
knife blade, add nuts and zucchini. Stir in by hand. Pour
batter into greased and floured loaf pan. Bake about 1 1/4
