BANANA NUT BREAD

1 c. ripe bananas, mashed
(about 3)
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 egg, slightly beaten
3/4 c. sugar
1/2 stick margarine, melted
and cooled
1/2 c. chopped walnuts

Mash bananas well and combine with sugar until blended.
Add egg and margarine and mix until smooth. In a separate bowl
combine flour, baking soda and salt. Add to banana mixture and
mix with a wooden spoon only until all flour is moistened. Add
chopped nuts. Pour batter into greased and floured 8 1/2 x 4
1/2-inch loaf pan. Bake at 325 degrees for 55 minutes. Cool before
removing from pan. Yield: 1 loaf.
Note: This freezes well.
