SPICY PINEAPPLE ZUCCHINI BREAD 1 c. salad oil 2 c. sugar 2 c. zucchini 3 c. flour 1 tsp. salt 1 1/2 tsp. cinnamon 1 c. chopped nuts 3 eggs 2 tsp. vanilla 1 can crushed pineapple 2 tsp. soda 1/2 tsp. baking powder 3/4 tsp. nutmeg Beat eggs to blend. Add oil, sugar and vanilla. Contin- ue beating mixture until thick and foamy. Stir in zucchini (coarsely shredded) and pineapple. Combine flour and spices; add to zucchini mixture. Add nuts. Divide mixture into 2 greased and floured 5 x 9-inch loaf pans. Bake at 350 degrees for 1 hour and 15 minutes or until tests done. Cool in pans 10 minutes, turn out on rack to cool thoroughly.
