WHOLE WHEAT BREAD

5 c. warm water
1/4 c. molasses
1/4 c. honey
3 1/2 Tbsp. dry yeast
3 Tbsp. malted barley
1/2 c. dough pep
2 c. unbleached flour
10 to 15 c. whole wheat flour
2/3 c. oil (vegetable)

Pour water into mixer. Add molasses and honey; mix
well. Add yeast; let stand until fermented. Add unbleached
flour, malted barley, dough pep and oil. Start mixer or knead
and stir in the 10 to 15 cups whole wheat flour until thorough-
ly mixed. Mix or knead for 10 minutes. Place into large pan
to rise, after rising, knead into pans. Makes 10 (3 x 6-inch)
pans or 5 large loaves. Bake at 350 degrees for 1/2 to 3/4 hour until
golden brown. Let rise in warm oven.
