ZUCCHINI BREAD 3 eggs 2 1/4 c. sugar 3 tsp. vanilla 1 c. vegetable oil 2 c. grated zucchini 3 c. flour 1/4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 5 tsp. cinnamon 1 c. chopped nuts Beat eggs until light and fluffy. Add sugar, vanilla and oil. Blend well. Stir in grated zucchini. Sift together flour, baking powder, baking soda, salt and cinnamon. Blend with creamed mixture. Fold in chopped nuts. Turn into 2 greased and floured 9 x 5-inch loaf pans. Bake in preheated 350 degrees oven for 1 hour or until it tests done. Yields 2 loaves. Freezes well.
