SWEET POTATO PIE pastry for 9-inch or 10-inch single crust 3 c. cooked yams, mashed 1/4 c. butter (room temperature) 2 eggs 1/2 c. sugar 1/4 tsp. salt 1/2 c. milk 1 tsp. orange extract 1/2 tsp. grated orange rind 1 tsp. cinnamon (optional) Except for pastry, beat all ingredients; pour into pastry lined pie pan. Bake at 425 degrees for 15 minutes or until edge of crust is lightly browned. Reduce heat to 300 degrees. Bake 25 to 30 minutes longer. Cool on cake rack 2 to 3 hours before cutting. Good with whipped cream or ice cream.
