1 3/4 c. flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg
3/4 c. oil
3/4 c. milk
jelly or jam

Turn oven to 400 degrees. Grease 12 muffin pans with some
shortening. Measure the flour, sugar, baking powder and salt
into the medium mixing bowl. Stir to mix with a wooden spoon.
Use a fork to beat the egg in a small mixing bowl. Add milk
and oil. Beat with fork until well mixed. Pour milk mixture
over flour mixture. Stir with wooden spoon only until flour is
wet. Leave lumps. Spoon batter into muffin pans until cups
are 1/3 full. Put a teaspoonful of jam on batter. Fill muffin
cups with remaining batter; bake 20 to 25 minutes until
muffins are golden.
