YEAST ROLLS

1 pkg. yeast
2 1/2 c. warm water
2 Tbsp. sugar
1 tsp. salt
3 Tbsp. shortening
5 c. plain flour

Put 1 package yeast, 1 1/2 cups warm water and 2 table-
spoons sugar in a bowl; stir and let set for 5 minutes. Add 2
cups flour and stir. Let rise until double in bulk. Add 1
more cup warm water and 1 teaspoon salt and 3 tablespoons
shortening. Add 3 cups flour to make a stiff dough. Stir,
then knead. Let rise until double in bulk. Knead again and
let rise about 30 minutes. Make loaves or buns and let rise
until double. Bake 350 degrees; rolls 35 to 40 minutes.
