BASIC ROLL DOUGH

3 1/2 c. flour
1 pkg. active dry yeast
1 1/4 c. milk
1/4 c. sugar
1/4 c. shortening
1 tsp. salt
1 egg

In mixer bowl, combine 1 1/2 cups flour and yeast. Heat
milk, sugar, shortening and salt just until warm. Add to dry
mixture. Add egg. Beat at low speed of electric mixer for 1/2
minute, scraping bowl. Beat 3 minutes at high speed. By hand,
stir in remaining flour to make a soft dough. Shape into ball.
Place in lightly greased bowl. Cover; let rise until double,
1 1/2 to 2 hours. Punch down, pour out on floured surface.
Let rest 10 minutes. Shape into rolls. Let rise 30 to 45
minutes. Bake at 400 degrees for 10 to 12 minutes. Makes 2 or 3
dozen rolls. Also good for cinnamon rolls.
