OATMEAL MUFFINS 1 c. rolled oats (instant or regular) 1 c. buttermilk or sour milk or sour cream 1/2 c. brown sugar 1/3 c. soft shortening 1 egg 1 c. flour 1 tsp. baking powder 1/2 tsp. soda 1 tsp. salt Mix rolled oats and buttermilk; let soak for 1 hour. Mix together thoroughly sugar, egg and shortening. Sift flour, baking powder, soda and salt. Stir in alternately with rolled oats and buttermilk; beat. Bake 20 to 25 minutes at 400 degrees. Makes 12 muffins.
