HAWAIIAN ZUCCHINI LOAVES|
3/4 c. oil
2 c. sugar
2 tsp. vanilla
2/3 c. crushed pineapple, not
1/3 c. coconut
2 c. grated zucchini, unpeeled
3 c. flour
3 tsp. baking powder
1/2 tsp. soda
3 tsp. cinnamon
1 tsp. salt
1/2 c. walnuts
Combine oil, eggs, sugar, vanilla, pineapple, coconut
and zucchini until foamy. Add dry ingredients and mix well.
Add nuts, put in 2 large well greased and floured bread pans.
Bake at 350 degrees for 50 to 60 minutes. Pop out of pans, right out
of oven. If using frosting, set hot loaves on cookie sheet.
Cover with frosting, set under broiler until coconut browns
lightly. Set on cooling rack. Frosting is optional.
6 Tbsp. melted butter
2/3 c. brown sugar
1/4 c. cream
1 c. shredded coconut
1/2 tsp. lemon juice
