CHRISTMAS BREAD

3 pkg. yeast
1 c. warm water
1 tsp. sugar
1 qt. milk
2 1/2 c. sugar
2 tsp. salt
1 c. shortening (oleo)
3 eggs
4 c. raisins
1 lb. peel, mixed
2 tsp. cinnamon
2 tsp. nutmeg
4 tsp. lemon extract
3 tsp. rum or brandy flavoring
flour

Dissolve yeast in cup of warm water, add teaspoon of
sugar. Stir well, let rise 10 minutes. Heat milk to warm, add
sugar, salt, shortening, beaten eggs, extract and flavoring.
Put 4 cups flour in large mixing bowl, add cinnamon, nutmeg,
raisins and peel. Mix well. Add yeast mixture to milk. Add
liquid ingredients to dry ingredients. Add more flour and mix
to form soft dough. Knead 3 or 4 minutes. Place dough in
greased covered bowl. Let rise in warm place, about 1 hour.
Shape in loaf pans. Let rise about 1 hour. Bake in 375 degrees oven
for about 30 minutes until browned.
