NEW ENGLAND APPLE CRUSTY

5 c. apples, sliced
3/4 c. sugar
1/2 tsp. cinnamon
1 Tbsp. butter
1/2 c. hot water

Crusty Layer:
1 c. sugar
1 c. flour
1/2 tsp. salt
1 tsp. baking powder
2 Tbsp. butter
1 egg, beaten

Slice apple into a pan 9-inches square; add mixed sugar
and cinnamon. Dot with butter. Add hot water, cover pan
tightly with foil. Let simmer over very low heat while prepar-
ing crusty layer.
Crusty Layer: Mix dry ingredients, cut in butter, add
beaten egg, mix well. Finish mixing with fingers, then drop
pieces of stiff batter onto the boiling hot apples, spreading
it to make a layer. Bake uncovered, in 350 degrees oven for 40
minutes or until the brown crusty layer is done. Serve hot or
cold with whipped cream or ice cream. Makes 9 servings.
