INDIAN FRY BREAD

1 c. scalded milk
3 1/2 Tbsp. sugar
2 1/2 tsp. salt
1 1/2 Tbsp. shortening
1 c. water
1 pkg. yeast
1/2 c. warm water
6 1/2 c. flour

Scald milk. Add sugar, salt and shortening. Blend and
add water. Cool to lukewarm. Soften yeast 5 minutes in 1/2
cup warm water. Add 2 cups flour to milk mixture. Beat until
smooth. Add yeast and mix again. Add flour gradually to make
a stiff dough that can be kneaded. Knead until smooth and
elastic (10 to 12 minutes). Place dough in a large greased
bowl and brush with butter. Cover; let rise until doubled.
Punch down and let rise again. To roll dough, cut pieces off;
roll flat; then make slits in top. Fry in oil at 375 degrees for 3 to
5 minutes or until golden brown.
