RUBY ELSEA'S DO-NUTS

3 1/2 c. all-purpose flour
4 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. mace
1 tsp. salt
3 Tbsp. shortening
1 c. granulated sugar
2 eggs, well beaten
1 c. milk
1/4 to 1/2 c. additional flour

Sift together flour, baking powder, cinnamon, nutmeg,
mace and salt. Cream shortening with granulated sugar. Add
well beaten eggs. Add sifted flour mixture alternately with
milk; beat until smooth. Add additional flour, enough to make
dough easy to handle. Chill at least 1 hour.
Roll on floured board to 1/2-inch thickness. Cut. Fry
3 to 5 minutes, turning only once, by inserting fork in hole.
Drain. Serve plain or sprinkle with confectioners sugar.
