2 c. sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 Tbsp. sugar
2 eggs, separated
1 1/4 c. sour milk or
buttermilk
6 Tbsp. melted shortening (or
salad oil)

Beat egg whites until stiff enough to stand in peaks.
Set aside. Beat egg yolks until thick as mayonnaise. Add milk
to eggs. Add egg mixture to sifted dry ingredients and beat
until smooth. Cool melted shortening slightly. Stir into
batter until well mixed. Fold the stiffly beaten egg whites
into batter, mixing lightly, until the patches of egg whites
disappear.
