RHUBARB CUSTARD PIE 1 1/2 c. granulated sugar 3 Tbsp. flour 1/2 tsp. nutmeg 2 Tbsp. melted butter 2 eggs 3 c. rhubarb, cut into 1-inch pieces Preheat oven to 450 degrees. Combine sugar, flour, nutmeg, butter and eggs into a bowl and beat until smooth. Roll out pastry for the crust and line a pie plate. Arrange rhubarb evenly over the pastry and pour the sugar mixture over rhubarb. Bake at 450 degrees for 10 minutes, then at 350 degrees for 30 minutes longer.
