POPOVERS

1 c. sifted all-purpose flour
1/4 tsp. salt
1 c. milk
1 Tbsp. melted butter
2 eggs

Start your oven at 450 degrees or hot. Grease 8 custard cups
thoroughly and put in oven to get very hot. Sift flour with
salt. Beat eggs until light and mix with milk. Pour half the
liquid into flour. Beat. Add rest of liquid and butter. Beat
smooth. Fill sizzling hot custard cups 1/2 full with batter.
Bake for 15 minutes. Reduce heat to 325 degrees or moderate and bake
30 minutes longer. Slip popovers out of cups with aid of
spatula or knife. Serve piping hot with butter, honey, etc.
