FLORIDA ORANGE MERINGUE PIE 1 c. orange juice 1 c. chopped orange sections (no seeds or white, peel sections) 2 Tbsp. grated orange rind (no white) 1 c. sugar 5 Tbsp. cornstarch 2 Tbsp. lemon juice 2 Tbsp. butter or oleo 3 egg yolks, beaten 3 egg whites 2 Tbsp. sugar Combine in a saucepan orange juice, orange sections, grated rind, sugar and cornstarch. Cook, stirring until mixture bubbles and clears. Add hot mixture in a slow stream to 3 beaten egg yolks, beating constantly. Cook 5 minutes longer over low heat, stirring constantly. Blend in lemon juice and butter. Pour hot filling into hot baked crust. Beat egg whites until stiff. Blend in 2 tablespoons sugar. Spread meringue on pie and bake in a 350 degrees oven until brown. Cool before cutting. Note: If baked crust is cold, cool filling then top with meringue and bake.
