IRISH SODA BREAD (IRISH)

4 c. flour, sifted
1/4 c. sugar
1 tsp. salt
1 tsp. baking powder
1/4 c. butter
1 to 1 1/2 c. seedless raisins
1 1/3 c. buttermilk
1 egg
1 tsp. baking soda

Mix and sift flour, sugar, salt and baking powder. Cut
in butter with a pastry blender until it looks like coarse
cornmeal. Stir in raisins. Combine buttermilk, egg and baking
soda, then stir it into the flour mixture until just moistened.
Bake in a greased 1 or 1 1/2 quart casserole dish at 375 degrees for
about 45 minutes or until golden brown.
