QUICK BUTTERMILK ROLLS|
4 1/2 c. flour
2 pkg. dry yeast
3 Tbsp. sugar
1 Tbsp. salt
1/2 Tbsp. soda
1 1/4 c. buttermilk
1/2 c. water
1/2 c. shortening or Crisco
Proof yeast in 1/2 cup water and a little sugar; set
aside. Combine buttermilk and shortening. I use Crisco oil,
salt and sugar in pan. Warm up on stove. Stir to dissolve,
lukewarm. Mix together yeast and buttermilk mixture. Add 2
cups flour and the soda. Beat with mixer until bubbly. Add
more flour to the dough until not sticky. Place dough in
plastic bag or bowl and cover with towel for 20 minutes in warm
place. Take out and shape into rolls or loaves. Let rise
again. Bake at 400 degrees for 20 minutes. Brush butter over top.
