REAL IRISH SODA BREAD

2 c. whole wheat flour
1 c. white flour
1 tsp. baking soda
pinch of salt
1/2 stick butter or margarine
1 1/4 c. buttermilk

Preheat oven to 400 degrees. In a bowl mix the dry ingredi-
ents. Add butter and blend together with your fingers. Pour
in buttermilk. Knead dough, working the dough with your hands
for a minute. Shape into a circle and place on a greased
cookie sheet or pie pan. With a wet knife make a deep X on the
loaf. Bake for 1/2 hour. Lower heat to 350 degrees. Bake 1/2 hour
longer. Cook, then slice.
